Damn Good Banana Bread

Equipment Needed

Stand mixer with whisk attachment. (hand mixer will work too)

Ingredients
  • 3-4 very ripe bananas
  • 1/2 cup (1 stick) melted butter
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 1/4 cup flour
    *optional add ins: nuts, chocolate chips, blueberries, etc
Directions
  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter and let it cool slightly.
  3. Peel and place the bananas in a large mixing bowl.
  4. Use a mixer on low speed to mash the bananas until smooth.
  5. Add the melted butter and sugar to the mashed bananas. Mix for a couple of minutes.
  6. Add the beaten eggs and vanilla extract. Continue to mix until well combined.
  7. Add the baking soda and mix well.
  8. Gradually add the flour, 1/4 to 1/3 cup at a time. Allow each addition to mix into the batter before adding more.
    • If needed, pause the mixer and scrape the sides of the bowl to ensure all the flour is incorporated.
  9. After all the flour has been added, increase the mixer speed to medium and mix for a few minutes until the batter is smooth and slightly airy.
  10. Fold in any desired add-ins.
  • For Loaf: Grease a loaf pan with butter or cooking spray.
  • For Muffins: Grease a muffin tin with butter or cooking spray (skip paper cups for best results).
  • Loaf: Pour the batter into the greased loaf pan. Bake in the preheated oven for 40-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Muffins: Scoop batter directly into the greased muffin tin. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Allow the banana bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes
  • To keep your banana bread fresh for as long as possible store banana bread under a cake dome or within an airtight container. (4-5 days)
  • You can also refrigerate or freeze the banana bread.

TIP: Toast a slice of banana bread and top it with a little butter for an extra delicious treat!
