Ingredients

1 can kidney or black beans, drained & rinsed
1 can cannellini beans, drained & rinsed
1 can corn, drained
1 red bell pepper, diced
1 green bell pepper, diced
1 small red onion, finely diced
1 jalepeño, seeded & chopped
1/4 cup fresh cilantro, chopped
2 avocados, diced
Juice of 2 limes
2 tablespoons olive oil
1 teaspoon ground cumin
Salt and pepper to taste

Directions

In a large bowl, combine the beans, corn, bell peppers, red onion, jalapeño (if using), and cilantro.
In a small bowl, whisk together the lime juice, olive oil, ground cumin, salt, and pepper.
Pour the dressing over the bean and vegetable mixture and toss gently to combine.
Just before serving, gently fold in the diced avocado.
