Cast iron dutch oven.
1 rack of pork ribs, cut to fit the Dutch oven
Dry rub of your choice
1-2 tablespoons olive oil
1 onion, sliced
1 1/2 cup beef stock
BBQ sauce of your preference
Preheat your oven to 300°F (150°C).
Season the pork ribs generously with the dry rub.
In a Dutch oven, heat olive oil over medium-high heat. Sauté the sliced onions until they are soft and lightly caramelized.
Place the seasoned pork ribs into the Dutch oven on top of the sautéed onions.
Add beef stock, then pour a generous amount of BBQ sauce over the ribs, ensuring they are well-coated.
Cover the Dutch oven with its lid and place it in the preheated oven.
Bake for 2 1/2 to 3 hours, or until the ribs are tender and cooked through.
Once done, remove the ribs from the Dutch oven. Optionally, you can brush on more BBQ sauce for extra flavor.
Serve hot and enjoy!
While it might seem a bit ‘un-Texan’ to cook ribs in the oven, with the scorching temperatures we have, not many people want to stand outside babysitting a fire. So, this is a great way to enjoy juicy ribs without that discomfort. You can enhance the flavor by adding a few drops of liquid smoke to your BBQ sauce or incorporating smoked paprika into your dry rub.
